New Public Vegan Food Truck is a woman-owned creative vegan food truck established in 2016 in Sisters, Oregon before relocating to Bellingham, Washington in 2018. The business operates from Evil Bikes in the Fairhaven neighborhood at 700 Harris Ave, serving organic, plant-based cuisine including burgers, tacos, nachos, wings, and other vegan comfort food with gluten-free options available. Named after a restaurant that belonged to the owner’s Greek immigrant grandfather, New Public has become a community hub dedicated to sustainable and innovative vegan dining for both vegan and non-vegan customers in the greater Bellingham area.
