Matilda Empanadas

Matilda RI Empanadas, owned by Tony and Darlyne Lugo, is a Dominican food truck specializing in handcrafted, heart-shaped empanadas now stationed at Pawtucket’s Creative Commerce Center. Founded in 2017 as a pop-up shop at Farm Fresh Rhode Island, the business expanded to the food truck in 2020 with support from COVID-19 relief funds, and is named after Tony’s grandmother to honor family traditions and Dominican heritage. Their menu features creative empanada varieties made with local, vegan, and non-GMO ingredients, including vegetarian and dessert options, and they offer catering services throughout Rhode Island.
