Cottonwood Creamery & Cookies is a New Mexican sweet café and artisanal ice cream shop located at 6561 Fourth NW in Los Ranchos de Albuquerque, owned by Paul Meyer and Irma Ruiz. The business, which launched in August 2024, serves small-batch, made-in-house New Mexico-inspired ice cream flavors, handcrafted cookies, and coffee, with signature offerings like green chile piñon ice cream and sopaipilla-flavored treats. The owners designed the space as a “resolana”—a traditional gathering place rooted in New Mexican village culture—adorned with local family artwork and intended to serve as a long-term community hub for connection.
