Pepe’s Bistro is a vegan and vegetarian Mexican restaurant located at 1311 South 11th Street in Lincoln, Nebraska, serving fresh, locally-sourced plant-based food since 2008. Owner Pepe has hand-selected seasonal produce from local farms to create an ever-changing menu that combines traditional Mexican flavors with Nebraska’s seasonal ingredients, and has earned recognition including the Mayor’s Arts Award: Heart of the Arts and the Sertoma Award for Dedication to Service and Mankind. Beyond the kitchen, Pepe founded the Lincoln Bike Kitchen and remains deeply committed to community engagement through fundraisers for neighbors and celebrations of local artists.
