Wallflour Bake Shop is a specialty bakery in Honolulu that produces naturally-leavened sourdough breads and pastries using locally-sourced ingredients and freshly-milled flours. Founded by Ellen Stavro and Javier Flores, who met while working at Runner and Stone in Brooklyn and later trained at acclaimed establishments in New York City, San Francisco, and Las Vegas, the bakery combines traditional baking techniques with creative use of ancient grains and local Hawaiian fruits. Wallflour operates primarily through the Kaka’ako Farmers Market on Saturdays and the Kailua Farmers Market on select Sundays, offering both sweet and savory pastries alongside artisanal breads.
