Alpine Eatery is a plant-based food truck operating in Lakewood, Colorado, launched in June 2020 by owner David Corboy with a mission to make plant-based fast food accessible and locally sourced. The truck serves handhelds like the Al Pastor Torta and Mediterranean-inspired bowls using fresh, regionally sourced ingredients, and regularly parks at the Capitol Building Tuesday through Friday from 11am-2pm.
