Wellness Sushi is Denver’s first 100% plant-based sushi and Japanese eatery, founded in November 2019 by CEO and Executive Sushi Chef Steven Lee and co-founder Phoebe Lee. Located at 2504 East Colfax Avenue, the restaurant specializes in authentic Japanese cuisine without any animal products, offering sushi, ramen, donburi, and okinawa onigiri made with honest and healthy ingredients. The establishment quickly expanded from its original 166 square foot pilot store into a flagship location, serving customers who seek high-quality Japanese flavors without compromising on health.
